The Perfect Steak

We're going to let you in on the secret to the perfect steak. The preparation begins 3 hours before cooking...

 

Step 1- Unwrap the steaks, pat them dry with paper towels & sprinkle liberally with kosher salt. Then put back in the fridge to rest. The idea is to get the enzymes to begin breaking the meat down to ensure the most tender steak you've ever had (no marinade required). 

 

Step 2- An hour before cooking, take the steaks out & pat dry again & sprinkle some more kosher salt on both sides. Not too much, just enough so you can see it. Put back in the fridge & wait for step 3.

 

Step 3- Pat dry one more time. Lightly salt. This time, leave steaks on the counter so the internal temp can get to room temperature to ensure even cooking. 

 

Step 4- Light the Grill!

 

Step 5- Just add pepper... Nothing else.

 

Step 6- Tent with tin foil, let rest at least 10 min.

 

Step 7- Voilà! Add desired sides and enjoy!
